Simple but great. lightly oil the fillets. Then season with salt and pepper. Add more salt than you think is right. Grill using charcoal and hickory chips.
Great Eats. This is a fast hot smoking of the fish.

Looking good. Hard to beat good smoked fish, especially fresh kingfish. You are right on the salt, I apply the salt as a rub and it always looks like too much
but never is.

The fish was very good unless you are Mrs. Handlebar. She says it taste like fish. Go figure! She did like it made into a mackerel salad though.
